Strolghino is a small salami typical of the Emilian tradition, typically from Parma, particularly appreciated for its sweetness, softness, and delicate taste. It originates as a niche product, linked to the processing of the most prized salamis of the area, such as Culatello and Fiocco.
Its name derives from “strolga,” a dialect word meaning “fortune teller.” According to tradition, this salami was used to predict the maturation progress of larger salamis. Small, lean, and with a short curing time, Strolghino is a salami simple only in appearance, but actually very refined and rich in history.
Strolghino is produced in the Parma area using lean and selected pork meats, carefully processed and stuffed into a thin and small-sized casing.
Precisely because of its lean composition and reduced size, it has a short curing period, generally about 20/30 days. This allows the salami to maintain its typical softness and its sweet and delicate flavor.
It is a product that requires attention in processing and storage: it should be kept in a cool and slightly humid place, avoiding overly dry environments, as it tends to dry out quickly.
Characteristics
Strolghino appears as a small, tender, and compact salami, with a lean and fragrant slice. The taste is sweet, delicate, and mild, ideal also for those who prefer salamis that are not too intense.
Its peculiarity is precisely its softness: it should be consumed young, when it retains all its fragrance and pleasant natural sweetness.
Pairings
Traditionally it is cut into fairly thick diagonal slices and served as an appetizer or aperitif.
It is perfect with rustic bread, fried gnocco, tigelle, warm focaccia, or artisanal breadsticks. It pairs very well with Parmigiano Reggiano, fresh cheeses, vegetables in oil, and a glass of Lambrusco, dry Malvasia, or young red wine.
An ideal salami to create an authentic, simple, and convivial Emilian platter, capable of telling the most genuine taste of the Parma tradition.
